Profile: The world's most famous and most planted red variety, displaying powerful and distinctive character of cassis and blackcurrant regardless of where it is grown. Deeply coloured and extremely long-lived, Cabernet Sauvignon has extremely small, thick-skinned berries and is a later ripening variety that does particularly well in moderate to warm climates. It does very well with oak, adding cigar box and cedar complexity. Often blended, it is a variety which demands ageing, allowing time for its tannins to soften and austerity to flesh out.
