This wine has become known as a benchmark for Australian Sauvignon Blanc. The style has remained fresh, aromatic, and pure over the past 28 years, with trademark pink grapefruit characters. Recent evolution has been to source from higher and cooler sites.

Production Method: All the grapes were hand picked to ensure they were in pristine condition upon arrival at the winery, this reduced the risk of oxidation, resulting in less need for the use of SO2. Whole bunches were destemmed, crushed, chilled, gently pressed and fermented at cool temperatures in stainless steel vats. The wine was matured on the lees for a short period and was bottled early under screwcap to retain crispness.
Style: Distinct pink grapefruit flavour profile, mid-palate weight and texture and a fine acidity. Bright and aromatic.

Profile: An extremely popular variety worldwide, capable of producing crisp, dry and aromatic whites. It is a very distinctive variety, carrying aromas of gooseberries, nettles, crushed blackcurrant leaves, and occasionally cat’s pee. The best examples offer some restraint of these natural characters, and flinty, smoky complexity to add intrigue. Some producers do utilise varying degrees of barrel fermentation to add texture and richness.
